WHere is a simplified interpretation of a beverage from a new drinks list. This is a batch premix that's bursting with flavours associated with festive period, which makes it perfect for your festive gathering. Save the extra syrup you can use for morning drinks, sweets, or for more rounds of this cocktail.

Makes enough for 10 servings
To make the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Premix (produces 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Place every components inside a pot, bring to a light boil, mixing so the sugar melts. After that, turn off the heat allowing it to cool entirely. Transfer into an sealable bottle, cap it and refrigerate it chilled, it can be stored for up to a month.
To make Cocktail Base: Combine every spirits and syrup in a sizeable container, leave to sit for an hour, then pass it through preferably using muslin, to ensure it's perfectly clear.
To serve: Measure 85ml of the premix to a mixing glass containing ice, and agitate gently for a minute until cold. Strain into a cold coupe glass or equivalent, decorate with a few cranberries and finish with a brief mist of the essential oil above the glass.
